Mediterranean Whole 30 Chicken Bowl with Lemon Herb Vegetables
This Mediterranean-inspired Whole 30 recipe has become my go-to when I need something that's both compliant and actually satisfying. It's packed with protein, colorful vegetables, and bright flavors that make you forget you're following any restrictions.

Ingredients
- 4 boneless chicken thighs (about 6 oz each)
- 2 medium zucchini, sliced into half-moons
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 medium red onion, sliced
- 2 cups cherry tomatoes, halved
- 1/3 cup extra virgin olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
Instructions
- 1
Prep your vegetables
Preheat oven to 425°F. Line a large baking sheet with parchment paper. Cut all vegetables as specified—keeping pieces roughly the same size helps them cook evenly.
- 2
Make the herb oil
In a small bowl, whisk together olive oil, minced garlic, lemon juice, oregano, basil, salt, and pepper. This becomes both your marinade and dressing.
- 3
Season the chicken
Pat chicken thighs dry and place in a bowl. Pour half the herb oil mixture over chicken and toss to coat. Let it sit while you prep vegetables (even 5 minutes helps).
- 4
Arrange on baking sheet
Place seasoned chicken thighs on one side of the prepared baking sheet. Arrange all vegetables around the chicken, then drizzle remaining herb oil over everything.

Roast everything together
Bake for 25-30 minutes until chicken reaches 165°F internal temperature and vegetables are tender with slightly caramelized edges. The cherry tomatoes should be bursting.
- 6
Finish and serve
Remove from oven and immediately sprinkle fresh parsley and dill over everything. Let rest 5 minutes before serving. The pan juices make a natural sauce.
