Ingredients

  • 4 boneless, skinless chicken thighs (about 600g total)
  • 1.5 cups cooked brown rice (or 3/4 cup dry)
  • 1 medium zucchini, diced into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Juice of 1 lemon
