Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 medium zucchini, sliced into half-moons
  • 1 large red bell pepper, cut into strips
  • 1 medium red onion, cut into wedges
  • 1 pint cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh lemon juice
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Sea salt and black pepper to taste

Instructions

    Pat chicken thighs dry and season generously with salt, pepper, oregano, thyme, and paprika. Let them sit at room temperature for 10 minutes while you prep the vegetables.

    Toss zucchini, bell pepper, red onion, and cherry tomatoes with 2 tablespoons olive oil, minced garlic, salt, and pepper in a large bowl.

    Preheat your oven to 425°F (220°C). Heat remaining olive oil in a large oven-safe skillet or cast iron pan over medium-high heat.

    Place chicken thighs skin-side down and cook for 4-5 minutes until golden brown. Flip and cook another 3 minutes. Remove chicken to a plate.

    Add the seasoned vegetables to the same pan, spreading them evenly. Nestle the chicken thighs on top, skin-side up. Scatter olives around the pan.
