Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 cup frozen mixed vegetables
  • 1 can (14 oz) coconut milk
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 cup fresh cilantro, chopped
  • 2 cups cooked rice (for serving)

Instructions

    Heat oil in a large pot over medium heat. Add diced onion and cook for 5 minutes until softened. This base creates amazing flavor without expensive ingredients.
