Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 large red bell pepper, diced
  • 1 medium zucchini, diced
  • 1 small red onion, sliced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 2-3 tablespoons warm water

Instructions

  1. 1

    Cook the quinoa base

Bring vegetable broth to a boil in a medium saucepan. Add quinoa, reduce heat to low, cover and simmer for 15 minutes until liquid is absorbed. Let it sit covered for 5 minutes, then fluff with a fork.

  2. 2

    Roast the vegetables

Preheat oven to 425°F. Toss bell pepper, zucchini, sliced red onion, and chickpeas with 2 tablespoons olive oil, oregano, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until vegetables are tender.

  3. 3

    Make the tahini dressing

While vegetables roast, whisk together tahini, lemon juice, minced garlic, and remaining 1 tablespoon olive oil. Add warm water gradually until you reach a drizzable consistency. Season with salt and pepper.

Divide quinoa among 4 bowls. Top each with roasted vegetables and chickpeas, then add the fresh tomato mixture. Sprinkle with feta cheese and drizzle with tahini dressing.
