Mediterranean Quinoa Power Bowls - Perfect Lunch Ideas Meal Prep

Ingredients

- 2 cups low-sodium vegetable broth

- 1 large cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/2 red onion, thinly sliced

- 1/4 cup fresh parsley, chopped
- 3 tbsp tahini
- 2 tbsp fresh lemon juice
- 1 clove garlic, minced
- 2-3 tbsp warm water

Bring vegetable broth to a boil in a medium saucepan. Add quinoa, reduce heat to low, cover and simmer for 15 minutes until liquid is absorbed. Remove from heat and let stand 5 minutes, then fluff with a fork.

While quinoa cooks, preheat oven to 400°F. Toss chickpeas with 1 tablespoon olive oil, cumin, paprika, salt and pepper. Spread on a baking sheet and roast for 20-25 minutes until crispy.

Whisk together tahini, lemon juice, minced garlic, and remaining tablespoon olive oil. Add warm water 1 tablespoon at a time until you reach a drizzle-able consistency. Season with salt and pepper.
