Ingredients

  • 1 cup steel-cut oats
  • 4 large eggs
  • 2 cups baby spinach
  • 1 medium sweet potato, diced
  • 1 cup blueberries
  • 1/2 cup Greek yogurt (plain, 2%)
  • 1/4 cup almonds, sliced
  • 2 tbsp chia seeds
  • 1 tbsp olive oil
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
