Easy Whole30 Snacks: 15-Minute Sweet Potato Rounds
When you're deep in a Whole30 and that afternoon hunger hits, you need something that actually fills you up—not just another handful of nuts. These crispy sweet potato rounds are my go-to when I need easy Whole30 snacks that taste indulgent but keep me on track.

Ingredients
- 2 large sweet potatoes, sliced into 1/4-inch rounds
- 2 tbsp olive oil or avocado oil
- 1 tsp sea salt
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1 ripe avocado, mashed
- 2 tbsp compliant almond butter
- 1/4 cup chopped fresh herbs (cilantro, parsley, or chives)
- 2 tbsp toasted coconut flakes (unsweetened)
Instructions
- 1
Prep the sweet potatoes
Preheat your oven to 425°F. Wash and slice sweet potatoes into even 1/4-inch rounds—no need to peel them. Pat completely dry with paper towels.
- 2
Season and arrange
Toss sweet potato rounds with oil, salt, garlic powder, and smoked paprika in a large bowl. Arrange in single layer on parchment-lined baking sheet, making sure they don't overlap.
- 3
Roast until crispy
Bake for 12-15 minutes, flipping once halfway through. They're done when edges are golden and centers are tender when pierced with a fork.

Add your toppings
Let cool for 2 minutes, then top half the rounds with mashed avocado and herbs, the other half with almond butter and toasted coconut. Serve immediately while still warm.
Nutrition Note
Sweet potatoes provide complex carbohydrates and beta-carotene, while healthy fats from avocado and almond butter help keep you satisfied between meals.
